Everybody Loves Muffins : Recipes’ translation as promised..

And today I finally had the chance to sit for a while and translate the 4 recipes of my Poker of Muffins © as promised. They are all very easy to prepare, and as for all the muffins recipes, you can change and swap ingredients as you prefer!


1)  Pears and Gorgonzola Cheese (very similar to some Old Soft Cottage Cheese or seasoned Camembert)

130 gr. whole wheat

30 gr. parmesan cheese

80 gr.  gorgonzola cheese

2 eggs – 2 little pears (the sweet and green ones) – 60 gr. walnuts (or pecan) – 50 gr. natural white yogurt – 1 table spoon of olive oil – salt and butter to enrich – 1 spoon of powder yeast for salted cakes.

Wash, clean and cut the 2 pears. Cut the gorgonzola cheese as well and mix together with the pears. Cut in pieces the walnuts, leaving the ones you will need to decorate the topping (an average of ten can be enough).


In a bowl mix the eggs with the wheat, a pinch of powder yeast, some salt and pepper as you like, then add the olive oil, the yogurt, the parmesan cheese and the mix of walnuts, gorgonzola and pears.
Fill 3/4 of the cupcake liners at your disposal, put on the top of each one a walnut or a little slice of pear and then in the oven at 170° for 20-25 minutes.

2) Muffin Parmesan Cheese and City Ham

250 gr. whole wheat  – 250 gr. milk – 50 gr. parmesan cheese – 1/2 bag of powder yeast for salted cakes – 50 gr. olive oil – 2 spoons of salt – 1 egg – 75 gr. of City ham (or any light ham you may prefer).

As usual, the muffin method is first the dry ingredients as wheat, salt, yeast and parmesan, then separately in another bowl, milk, oil and the eggs. Melt the first bowl to the second, then add the city ham, cutted in little pieces, then put the result in the oven at 180° per 15-20 minutes.

3) Muffins with homemade yellow plums marmelade

250 gr. whole wheat – 120 gr. white sugar- 2 spoons of yeast power  – 250 ml. milk – 30 gr. di olive oil – at your taste, lemon or orange zest

As you did before, melt the dry ingredients in one bowl, and the wet in another, then mix them together and after you put the first spoon in the cupcake liners, you add a spoon of marmelade in the middle and then cover it with some more mixing. Cooking temperature is  170 ° per  20 – 25 minutes and you can add some powder sugar on top, as soon as they are out of the oven.

4)  Muffins Carrots, Almonds and Coconut Wheat

150 gr. fresh carrots – 2 eggs – 75 gr. peeled almonds – 75 gr. sugar– 25 gr. coconut wheat – 1/2 bag of yeast powder – black chocolate for the topping.

Clean the carrots, and cut them in the mixer with the sugar,  then add the cutted almonds and eggs. Mix well, than add the coconut wheat and the yeast. Cooking temp 140 ° for the first 10 min, then increase at  160° for 30 mins .
