Girando allegramente per il web, ho scoperto il blog di una bravissima chef francese, Chef Nini, che propone ricette originali, gustose e bellissime da vedere… E tra le tante ricette che mi sono ripromessa di provare, mi ha incuriosito quella dei suoi Whoopies al té verde Matcha (sarà che questa portentosa polverina verde aveva bisogno di qualche nuova formula per esser testata, sarà che le foto della brava Nini erano talmente belle da farmi superare qualsiasi remora…). Non sapevo che quella dei Whoopies è una moda che impazza, sono praticamente i diretti concorrenti dei tanto temuti Macarons, e in America si discute ancora sui loro luoghi d’origine (c’é chi sostiene che la Whoopie Pie sia il dolce caratteristico dello stato del Maine e chi invece afferma che sono parte della tradizione Amish della Pennsylvania…ai posteri l’ardua sentenza!): origini a parte, dopo averli provati, ve li consiglio, nonostante siano una moda. Sono morbidi, sono facili da fare e potete sbizzarrirvi con tutte le varianti possibili (quelli più famosi sono in stile biscotti Oreo, al cioccolato con crema di latte, ma quando si tratta di variazioni su tema, ognuna di noi ha nel cassetto qualche curiosità da sfatare o sbaglio?), io qui vi riscrivo la ricetta che ho utilizzato, anche se per il ripieno ho scelto qualcosa di più delicato come la marmellata di mirtilli rossi (anche perché non è ancora tempo di ciliegie!)…
Per questa ricetta (sono circa 20 whoopies, quindi 40 biscotti) vi occorrerà:
Per i biscotti
250 grammi di farina – 100 grammi di burro a pomata – 2 cucchiaini di té verde Matcha – 100 grammi di zucchero – 1 uovo – 10 cl. di latte – 1 cucchiaino di lievito in polvere – mezzo cucchiaino di bicarbonato in polvere
Per la crema di farcitura originale
150 grammi di mascarpone – 15 grammi di zucchero – 1 cucchiaino di té verde matcha e 10 ciliegie (che potrete sostituire con altra frutta)
Sbattete il burro con lo zucchero fino ad ottenere un composto morbido ed omogeneo. Aggiungete l’uovo e continuate a mescolare. Versate la farina, il té, il lievito ed il bicarbonato e mentre mescolate il tutto, aggiungete il latte a filo. Il risultato sarà un composto morbido, ma non liquido.
Mettete il composto in una sac à poche e su una teglia coperta con carta forno, fate i vostri biscotti (dai 4cm ai 6cm) sempre attente, a mantenere le distanze, perché in forno, si allargheranno.
Mettete in forno preriscaldato a 180° per 10 minuti, ed una volta pronti, lasciateli raffredare.
Per la farcitura: mescolate bene il mascarpone con lo zucchero ed il té verde ed una volta farcito il biscotto, aggiungete al centro un pezzetto della frutta scelta. Chiudete con un altro biscotto e conservate in frigo (nel caso, invece di una farcitura più semplice, si manteranno bene anche fuori dal frigo).
Ora non vi resta che gustare il vostro whoopie in compagnia di un buon té o di tanti amici golosi!
During my daily web explorations, I discovered the blog of a talented French chef, Chef Nini, she is offering original recipes, tasty and amazing pictures … Among the many recipes that I promised myself to try, I was curious about the Whoopies Green Tea Matcha’s one (this special green powder so portentous I received from Japan is always in need of some new formulas to be tested, and the one proposed by chef Nini had so amazing photos I thought it did worth my while to try…). I did not know that Whoopies are the last fashion in baking, they are practically the direct competitors of the French Macarons, and in America there is still debate about where they really come from (there are those who maintain that the Whoopie Pie dessert is typical of the state of Maine and who says they are part of the traditional Amish recipes of Pennsylvania … in between, I just decided to go for my trial!). Origins aside, after being tested, I recommend them, despite being a fashion. They are soft, they are easy to make and you can pick any all the possible variants (the most popular are the Oreo style’ cookies, chocolate cake with cream, but when it comes to variations on the theme, each of us has her own ideas, isn’t it?); here I will rewrite the recipe I used, although for the filling I chose something more delicate like the cranberry sauce (because it is not yet time to cherry over here, girls!)…
For this recipe (whoopies are about 20, then for 40 cookies) you will need:
For the biscuits
250 grams of flour – 100 grams of butter cream – 2 teaspoons of Matcha green tea powder – 100 grams of sugar – 1 egg – 10 cl. milk – 1 teaspoon baking yeast – ½ teaspoon of baking powder (bicarbonate)
For the Chef Nini’s filling cream:
150 grams of mascarpone (or any plain cream cheese) – 15 grams of sugar – 1 teaspoon matcha green tea powder and 10 cherries (you can substitute with other fruit or jam).
Beat butter with sugar until the mixture is smooth and homogeneous. Add the egg and continue stirring. Pour the flour, tea powder, baking powder and baking soda (bicarbonate) and mix together and add the milk little by little. The result is a soft but not liquid dough.
Put the mixture into a pastry bag and on a baking sheet covered with parchment paper, make your biscuits (from 4 cm to 6 cm) always being careful to keep a little bit of distance, because in the oven, they will be broadened.
Place in a preheated oven at 180 degrees for 10 minutes, and once ready, let them cool.
For the filling: Mix the mascarpone with the sugar and green tea powder, and once stuffed the cookie, add a piece of fruit in the middle range. Close with another cookie and stored in the refrigerator (in the case, instead of a simple filling, you will conserve well out of the fridge).
Now you just need to enjoy your Whoopie in good company or just sipping some cups of tea 🙂
